I love marzipan. My wife was making marsipan (I never remember whether marzipan is spelled with an s or a z) the other day because she puts a layer of marsipan on the Christmas cake under the icing.

I couldn’t resist the odd taste or 3, she had to make more marzipan to make up for my tastings.

Honey Nutters, Do You Love Peanut Butter?

Honey Nutters, Peanut Butter to the Max

This is a no bake cookie/candy. It is a recipe that has been
passed down in my family for three generations. This is a
healthy snack for people of all ages.

yield: 4 dozen.
INGREDIENTS:
16 graham crackers
1 cup crunchy peanut butter
2/3 cup honey
1/2 cup nonfat dry milk powder
1 cup coconut

DIRECTIONS:
Crush the graham crackers between two pieces of wax paper with a rolling pin or in a
food processor.

Combine the peanut butter, honey and powdered milk in a large mixing bowl. Mix well.
Make small balls with mixture and place on wax paper. Roll balls in shredded coconut.

Make Marshmallows, But Don’t Eat Too Many. Homemade Marshmallow Recipe

I’ve spent a lovely afternoon making marshmallows with the kids. They had to provide a homemade product for a stall that they were doing at school, half the profits to go to charity. So I helped and we had a lot of fun.

Here’s the marshmallow recipe I used, it’s really easy, the kids love it and it makes something for them to sell.

Don’t eat too many during the making, there’s a lot of sugar in marshmallows.

Ingredients:

1 1/2 cups sugar
2 tablespoons gelatine
1 teaspoon vanilla extract
2 cups desiccated coconut
icing sugar
red food coloring

DIRECTIONS
Put the sugar in a large bowl. Add 1 cup of the water after boiling it. Stir till the sugar is dissolved.

Add the gelatine to the remaining water and stir till dissolved.

Add the gelatine mixture to the sugar mixture and beat well until frothy, then it will get thicker and thicker. Beat till thick.

Add vanilla and stir till incorporated. If you wish add red food coloring if you want pink marshmallows. Add to the color desired.

Pour into a wide tray, either non stick, greased or with baking paper. Preferably non stick. Wait till firm, cut into squares and eat. Yum.

Option. Roll in coconut or icing sugar if desired.

TIP. It takes a lot of beating, use an electric beater if you have one or expect sore arms. It’s worth it. Homemade marshmallows taste so much better than commercial marshmallows.
