Homemade Marshmallows

I just love marshmallows, though I don’t make them as often as I’d like because it’s a lot of sugar to eat in one go. But I made them last week when my son said heĀ  had to have some homemade candy or other homemade item to sell at the school stall. I ate too many.
INGREDIENTS:
2 envelopes unflavored gelatin
1 1/4 cups water, divided
2 cups white sugar

DIRECTIONS:

In small bowl, stir together gelatin and 1/2 cup plus 2 tablespoons water. Set aside to set up.

In medium saucepan, combine sugar and remaining 1/2 cup plus 2 tablespoons water, over heat. Stir until sugar is dissolved and let cool.

Combine gelatin and sugar water, and beat with electric mixer until foamy. Pour into a lightly greased 9×13 inch baking dish and let set. Cut into squares and serve.
